Just made this for an event tomorrow at work. This is my family's standard mode.
Potato Soup 3-4 lbs Potatoes 2 chicken bouillon cubes 1 can evaporated milk 1/2 stick butter 2 carrots diced minced onion to taste 3 to 4 slices bacon, cooked and crumbled cheddar cheese, shredded boil potatoes, 1 bouillon cube, carrots, and minced oion until potatoes are tender (not too soft), Drain off water until level with potatoes. Add evaporated milk, 1 bouillon cube, butter and bacon. Let simmerfor 15 minutes with lid on pan. Garnish with cheddar cheese.
I didn't deviate too much, but I added in some chicken breast (lazy, used the canned stuff,) a bit more bacon, and instead of cheddar went with a cheddar / monterey jack blend. I approve of it.

I made this for my girlfriend and I a few nights ago, kind of a throw-together of some stuff we had laying around that turned out really good and we will make it again.
1.5 lbs. ground turkey 1 cup quinoa 2 cans rotel 1 can black beans
brown ground turkey, season with cumin, onion powder, garlic, chili powder and other mexican sounding things.
cook quinoa, add quinoa to turkey, add rotel and beans, stir thoroughly. you may garnish with shredded cheese, sour cream or black olives.
Turned out really tasty, pretty lean (avoiding cheese and sour cream) and FILLING. a little bit of this stuff has the density of a dying star. We named it "Mexibrick"

Quinoa is the "wonder grain"... I like the stuff. I've even had Quinoa pasta. It was good, but obviously a bit more expensive then regular pasta.
